Bafun Uni and Murasaki Uni are two types of sea urchin in Japanese cuisine:

• Bafun Uni: From a small, red-orange sea urchin with short, dense spikes. Its bright orange roe is sweet and creamy. Often seen as higher quality and more expensive.

• Murasaki Uni: Comes from a larger, purple sea urchin with longer, sparser spikes. The roe is usually yellow or light orange, milder and slightly less creamy.

Bafun Uni is smaller with dense spikes and has a sweeter, creamier taste, while Murasaki Uni is larger with longer spikes, offering a milder flavor.
