On 2 October 2026, Sushi Kuuya hosted a special evening in collaboration with Brooklyn Kura, a craft sake brewery from Brooklyn, New York, bringing together traditional Japanese sushi, American-brewed sake, and live music at our intimate omakase counter in Langsuan, Bangkok.

For one night, Chef Goji Kobayashi explored a different side of his culinary creativity, combining his approach to Japanese cuisine with the contemporary spirit of Brooklyn Kura.

The evening offered guests a unique omakase and sake pairing experience in Bangkok, celebrating craftsmanship, creativity, and the connection between food and sake.

Brooklyn Kura: Japanese Sake Craftsmanship from New York

Sake may be deeply rooted in Japanese culture, but its craftsmanship continues to inspire brewers around the world.

Based in Brooklyn, New York, Brooklyn Kura is an American craft sake brewery dedicated to producing sake using traditional Japanese brewing principles while expressing its own identity.

Its approach reflects how sake culture continues to evolve beyond Japan, bringing new perspectives to a centuries-old tradition.

For Sushi Kuuya, collaborating with Brooklyn Kura was an opportunity to introduce our guests in Bangkok to another side of the sake world – one where Japanese tradition meets contemporary American craftsmanship.

A Different Side of Chef Goji’s Omakase

At Sushi Kuuya, Chef Goji Kobayashi is known for his dedication to traditional Japanese sushi techniques, seasonal ingredients, and carefully prepared omakase courses.

For Brooklyn Night at Sushi Kuuya, he stepped outside the restaurant’s usual dining format to explore something different.

The collaboration brought together Chef Goji’s Japanese culinary background and the creative energy of Brooklyn, where he could experiment with a more relaxed approach while maintaining the craftsmanship behind every dish.

It was an opportunity to experience another side of Chef Goji — one that embraces new ideas while staying connected to his culinary roots.

Exploring Sake Pairing Beyond Tradition

Sake pairing is an important part of the dining experience at Sushi Kuuya.

Our philosophy is that sake should not simply accompany food. A thoughtful pairing can enhance the natural sweetness of seafood, complement umami, balance richness, and reveal different layers of flavour throughout a meal.

For this collaboration, Brooklyn Kura’s sake became part of the dining journey.

Rather than focusing only on familiar Japanese sake styles, the evening encouraged guests to explore how sake brewed in New York could complement Japanese cuisine.

It was a meeting of two crafts, connected by a shared appreciation for ingredients, technique, and flavour.

Sushi, Sake, and Live Music at the Counter

Unlike our regular omakase service, Brooklyn Night introduced live music into the Sushi Kuuya dining experience.

The three-hour evening brought together food, sake, and music in a more relaxed atmosphere, creating an opportunity for guests to experience Sushi Kuuya from a different perspective.

Our small counter became a space for conversation, discovery, and connection — not only between chef and guest, but also between different cultures and expressions of craftsmanship.

Connecting Japanese Cuisine and Sake Culture in Bangkok

At Sushi Kuuya, we believe that Japanese cuisine and sake have stories worth sharing.

Whether through collaborations with Japanese breweries, visits from sake producers, or special events with international craft sake makers, our goal is to bring guests closer to the people and philosophies behind what they enjoy.

Sushi Kuuya x Brooklyn Kura was another chapter in that journey, demonstrating that respect for tradition and openness to creativity can exist together.

We would like to thank the Brooklyn Kura team, everyone involved in bringing this collaboration to life, and all our guests who joined us for this memorable evening.
